Couscous Salad - Liz

Couscous Salad            from Liz

½ cup uncooked couscous
½ to  1/8 cup chicken broth
1/1/2 T. Olive Oil
1 T. Lime juice
½ tsp red wine vinegar
¼ tsp ground cumin
4 green onions chopped
½ red pepper chopped
1/8 cup chopped fresh cilantro
½ cup frozen corn thawed
1 can black beans drained

salt and pepper to taste

Boil  chicken broth, remove from head and stir in couscous.  Cover
And let stand 5 minutes


Mix oil, lime juice, cumin, green onion and toss to coat couscous, breaking up if need  be.  Then add the corn and red pepper and cilantro
