Fresh Tomato Soup

2-1/2 lbs of tomatoes
8 garlic cloves
2 onions
S & P
1/4 c Olive Oil
2 bay leaves
heavy cream
chicken broth
1/2 c fresh basil

Core and quarter tomatoes.  If using cherry, just take off the stems. Quarter onions and peel garlic.  Place on a cookie sheet.  Dress with S & P and olive oil and roast at 450 degrees for 30 minutes.  After roasted blend in Vitamix until desired consistency.  Add chicken broth as desired and the bay leaves and cook in a big pot on the stove for another 30 minutes or so.  Blend the fresh basil with a few cups of tomatoes and add back to pot.  Serve with heavy cream or coconut milk.  Enjoy with a havarti grilled cheese.
